Beach Weekend

My husband and I were able get away this weekend and head to the beach. It was such a nice break and we couldn’t ask for better weather!

My mother-in-laws family owns a beach house in Bethany that we always enjoy visiting.

On our beach stroll

We found a great fruit stand on our way home and stopped to load up. We haven’t been disappointed with any of our finds.

Our favorite were these “Rainer” cherries. Just a perfect amount of sweetness and a slightly softer texture.

We also came across this random BBQ restaurant and decided to give it a try.

I know, their sign looks…unappetizing. But hands down, the best brisket I’ve had. We already know we’ll be going back next time we’re at the beach.

Beef brisket sandwich, chips and a pickle. Yum!

My mother-in-law and I did way too much shopping at the outlets. But, we got some great deals : )

Although this little guys wasn’t at the beach with us, we were able to sneak a quick visit in before we left. He just keeps getting cuter and cuter!

New recipe, a baseball game and a sweet addition to the family

Have you ever tried Bonefish Grill’s Bang Bang Shrimp? It’s one of the best appetizers I’ve ever had. Unfortunately it has a light breading that I can’t eat anymore. BUT, I tried this recipe called “Bangin Shrimp” that’s as close to the real thing as you’ll ever get. We were literally scraping the plate clean. It was absolutely delicious!

Last night we attended a Yankees vs. Nationals game. The Yankees won, so we left happy : )

We had awesome seats complements of Dad and Mom.

My brother Adam and his wife Pami welcomed this little guy into the world on Thursday. He’s super sweet and we love him to pieces.

New Recipes

My husband would tell you Pinterest is one of the best things that ever happened in this home. I find tons of decorating ideas and endless new recipes (his personal favorite).  The past two weeks of dinner planning were done entirely on Pinterest. Some we absolutely loved, others won’t be repeated. I didn’t do a good job taking pictures, but I’ve provided links to some of the recipes if anyone is interested. I have a few more to try and will post those if we like them!

Paula Dean’s BBQ Chicken – delicious and definitely a repeat. We served it with couscous and Caprese salad.

Korean Beef Skewers – I think we would both say this is a new favorite in our house. It was one of the easiest recipes ever and tasted AMAZING!

White Chicken Enchilada’s – the white sauce was a bit too heavy for us. But I think you could get away with half or 3/4’s of it and still get a good taste.

Cinnamon rolls for the husband – he said they were the closest thing to a Cinnabon he’d ever tasted. Given that the pan didn’t last long in our house, I think we’ll be repeating them again, too.

Gluten Free Muffins – they weren’t as flavorful as I would have liked. I added blueberries, but it could have used cinnamon or more sugar. I do have to confess that I spread some of the sugary mix from the cinnamon rolls on top of the muffins and they tasted SO much better. When does sugar ever taste bad?

Fresh out of the oven

Thick layer of icing is a must for cinnamon rolls!

More DIY Artwork

We still need several large pieces of artwork around our home. With some creativity and several coupons, we’re slowly adding to our collection.  Our latest piece was made from a box of postcards I purchased at Anthropologie.

For $25, you get 100 colorful and eclectic postcards with classic book covers on the front. I ended up only using 16 of them, but I’m sure I can find other creative uses for them.

I purchased a basic 20×30 frame from Michaels ($16), heavy card stock paper for the background ($2) and photo splits ($3). I used the glass from the frame to cut the background paper to fit, measured the outside edges and divided the leftover space to place the postcards.

We’re really happy with the final result. More artwork to come…
