Healthier Eats

Last night, we decided to have a date-night in and tried some new things.

Super easy Caprese Salad. Thank you Pinterest for the inspiration. I was finally able to use fresh basil from my plant. You can find the recipe here.

We had a hodge-podge of fresh fruit, veggies, delicious prosciutto, hummus, cheese and Ciabbata bread.

And for dessert…..this delicious caramel popcorn. It has no corn syrup, so we felt a little less guilty eating the entire bowl in about ten minutes.

3-4 cups stove top popcorn (don’t add butter or salt)

1/2 c. brown sugar

1/4 c. honey

4 tbs butter

1 tsp kosher salt

Cook the sugar, butter, honey and salt until golden brown (about 15-20 minutes on medium. Stir often). Pour over popcorn and stir until coated.
